Ingredients:
2-1/2 cups all purpose flour
1 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
1 tsp. ground cinnamon
2 eggs, well beaten
1 cup oil
2 cups sugar
2 cups carrots, grated
1 small can crushed pineapple
1 cup pineapple juice
2 tsp. vanilla extract
1 cup wallnuts, toasted and chopped |
Frosting:
1 cup powdered sugar
1 tbsp. butter -melted
2 tsp. vanilla extract
3 ounces cream cheese

Method:
Combine together all-purpose flour, baking
powder, soda, salt and cinnamon in a bowl.
In a large bowl, with an electric mixer,
beat together eggs, oil, sugar, carrots,
pineapple and juice.
Add flour mixture, nuts, vanilla and
mix
well. Pour into greased rectangular
cake
pan.
Bake in preheated oven at 350° for about
45 minutes. Or until pick inserted in center
comes out clean.
Frosting:
Cream together butter and cream cheese. Add
vanilla and powdered sugar. Beat until smooth.
Spread on cooled cake. Cool and cut into slices.
