Ingredients:
1 cup powdered sugar
3-inch piece of ginger, peeled and sliced
1 orange, segmented
1 cup pineapple, cut into pieces
1 cup blackberries
2 kiwis, peeled and sliced
2 plums, cut into pieces
2 nectarines, cut into pieces
1 cup sweetened coconut, plus more for garnishing
2 cups heavy cream
2 tablespoons powdered sugar |
Method:
In a pan, combine 1 cup sugar, ginger and
1 cup water. Bring to a boil, and cook for 20 minutes.
Set aside to cool. In a bowl,
mix all the
fruits and coconut, pour 1 cup
of ginger
syrup over the fruit mixture
and stir. Place the heavy cream and the powdered sugar
in a large bowl.
Whip the cream to form soft. Put tablespoons of cream into serving glasses,
put some fruit mixture, add some more cream
on the top. Garnish with coconut, and serve
immediately. |
