Navratan Korma

Payaswini's Recipes





Ingredients:
2 cups chopped, boiled Mixed Vegetables
(Beans, Carrots, Potatoes, Cauliflower, green peppers and Peas)

2 tbsp. butter
1 tsp. ginger-garlic paste
1 large onion sliced
1/2 tsp. turmeric powder
1 tbsp. cashewnuts, chopped
1 tomato, chopped
2 tbsp. tomato puree or sauce
2 tbsp. yogurt
1 tsp. coriander cumin powder
1-2 tsp. garam masala
1/2 tsp. red chilli powder
1/2 cup heavy cream
2 tbsp. pineapple, chopped
1 tbsp. raisins
1 tbsp. chopped coriander leaves
Salt to taste.
Method:
Heat butter in a pan, add ginger-garlic, onions, cashews and turmeric. Fry till well browned.
Add tomatoes, tomato puree, yogurt and dry powders, and simmer for 5 minutes.
Add boiled vegetables, raisins, pineapple and salt.
Add 1 cup of water and let it boil for 10 minutes.
Add cream and mix well. Remove from the heat and garnish with chopped coriander leaves.

Serve hot with chapatis/rice.
