Pavs (Soft Buns)
Butter to shallow fry

For Bhaji Ingredients:
2 cups chopped mixed vegetables
(cauliflower, bell pepper, beans, carrots,
potatoes, peas etc.)
1-2 tbsp oil
1/2 tsp. cumin seeds
1 tsp. ginger - garlic paste
1-2 onions, chopped
2 tomatoes, chopped

1/4 tsp. turmeric powder

2 tsp. paav bhaji masala
1 tsp. red chilli powder
1 tsp. lemon juice
1 tbsp. butter or ghee
Salt to taste
To Garnish:
1 chopped onion
1-2 tomatoes, chopped

1-2 tbsp. chopped coriander
Method:
Pressure cook mixed vegetables with little salt till well done.
Mash them coarsely after draining and keep aside.
Heat oil in a pan, add cumin seeds, allow to splutter.
Add ginger-garlic paste, onions, tomatoes and turmeric. Fry for 5-8 minutes till very soft.
Add mashed vegetables, pavbhaji masala, chilli powder, salt, butter and little water.
Cook till gravy is thick. Remove from the heat and add lemon juice, coriander leaves and mix well.

For Pavs:
Slit pavs horizontally, apply butter and roast it on a griddle till hot and soft and crisp on both sides.
Serve hot with bhaji, garnsih with onion, tomatoes and coriander leaves.
