Roti Stuffed with Carrots

Ingredients:
2 cups wheat flour (plus more for dusting)
2-3 tbsp. oil (plus extra for brushing)
1/2 tsp. mustard seeds
2 green chillies, chopped

1 onion, finely chopped
1 clove garlic, crushed
1 tsp. ginger, grated
2 cups carrots, grated
Salt to taste
Warm water to mix the dough
Method:
Mix the flour, salt and water with 1 tbsp. of oil to firm a smooth, soft dough.
Knead for 10 minutes until smooth. Cover and set aside for 1-2 hours.
Heat 2 tbsp. oil in a pan and fry the mustard seeds until they start crackling.
Add chillies, onion, garlic, ginger and fry until the onion is soft and browned.
Add grated carrots, salt and fry for 5 minutes. Remove from the heat.
Divide the dough into equal portions. Roll each portions into small flat circles on a lightly floured board. Spread spoonful of the carrot mixture over the roti, fold the dough in half and brush with oil.
Fold the dough again to make a triangle and dust with flour.
Roll out with a rolling pin to make a triangle rotis, dusting with flour to prevent sticking. Heat the griddle over a medium heat.
Place one roti in the hot griddle and cook for few seconds. Turn the roti over and brush with oil.
Cook for few minutes,
turn the roti over again and brush with oil and fry for few minutes or until crisp on both sides. Fry the remaining rotis in the same way.

Serve warm with Curry/Chutney.
