Ingredients:
2 cups rice flour
1-2 cups finely grated vegetables
(carrots,
bell pepper, beans, cabbage,
onions and dill
leaves)
4-5 green chillies, chopped
1 tsp. cumin seeds
1 tbsp. chopped coriander leaves
Salt to taste
Oil for roasting

Method:
Mix all the ingredients in a large bowl,
add water little by little as
you mix them.
(usually the juices from the
grated vegetables
will be enough to form the dough.)
Knead well to make a soft dough. Pour 1-2 tsps, of oil on the griddle, keep a separate bowl of water.
Take out a small handful of dough mix and put it on the middle of the griddle.
Wet your hand in water, start gently pressing
the dough from the center.
Keep repeating this by wetting
the hand each
time the dough starts sticking
to your hand.
Continue pressing till the dough
spreads
uniformly making a large circle.
Then make a small hole in the
center, pour
little oil in the center and
around the edges
of rotti.
Cover with the lid and place griddle on the
stove. Cook well on both sides
till golden
brown.
Follow the same procedure with the remaining
dough.
Serve hot with any chutney or
pickles.
