Ghee Rice

1 cup rice
1/2 cup grated fresh coconut
1 tbsp. sugar
2-3 tbsp. ghee
1/2 tsp. mustard seeds
1 tsp. bengal gram
1 tsp. black gram
1 tbsp. peanuts
2 dried red chillies, crushed
6-8 curry leaves
1 tbsp. coriander leaves, chopped
Salt to taste.
Cook rice and cool slightly.
Heat ghee in a saucepan, add mustard seeds, when it pops add bengal gram, black gram and peanuts.
Fry until lightly browned,
add red chillies, curry leaves and fry for 2 minutes.
Add rice, coconut, sugar, salt and mix well. Remove from the heat and garnish with coriander leaves.
Serve hot or cold.
