Payaswini's Recipes





Ingredients:
1 cup rice
4 potatoes, peeled, boiled and chopped
1 cup mint leaves
6-8 green chillies, chopped
1 tbsp. cumin seeds
1 tsp. grated, ginger
1 tbsp. chopped coriander leaves
1/2 tsp. mustard seeds
1 tbsp. lemon juice
Salt to taste
2-3 tbsp. oil
Method:
Cook rice and cool slightly.
In a blender, put mint leaves, chillies, cumin seeds, ginger, corinader leaves and blend this to a smooth paste.
Heat oil in a sauce pan, add mustard seeds, after it splutters, add ground paste and fry for 10 minutes.
Add potatoes, salt and mix well. Remove from the heat. Add rice, lemon juice and mix well.

Serve warm or cold.
