Ingredients:
1 cup rice
5-6 eggplant, chopped
1 tbsp. tamarind juice or paste
1/2 tsp. mustard seeds
1 tbsp. peanuts
1/2 tsp. turmeric powder
6-8 curry leaves
1 tsp. lemon juice
3 tbsp. oil
Salt to taste
2 tbsp. Bhath Powder |
Method:
Cook rice and cool slightly.
Heat oil in a sauce pan, add
mustard seeds,
after it splutters, add peanuts
and fry till
light brown.
Now add eggplant, curry leaves,
turmeric
and cook gently until the eggplants
are tender.
Add tamarind juice, bhath powder,
salt. Mix
well and cook for few minutes.
Remove from
the heat.
Add rice, lemon juice and mix
well.
Serve with raita. |
