Ingredients:
1 cup basmati rice
1 cup chopped mixed vegetables (boiled)
(green beans, carrots, cauliflower florets,
green pepper, peas etc.,)
2 onions, thinly sliced
2-3 green chillies, chopped
1 tsp. ginger, grated
2 cloves garlic, crushed
1 tsp. cumin seeds
1 tbsp. cashew nuts, chopped
2 cloves
1-2 cinnamon stick, broken
1 tsp. coriander powder
1 tsp. red chilli powder
1/2 tsp. garam masala
1 tbsp. coriander, chopped
2 tbsp. butter or ghee
1 tbsp. oil
Salt to taste

Method:
Cook rice adding 1 tbsp, oil and set aside.
Heat ghee in a pan and fry the cumin seeds,
cashews cloves, cinnamon until
lightly browned.
Add ginger, garlic, green chillies
and onions
and fry until lightly browned.
Add coriander powder, red chilli powder,
garam masala, boiled vegetables
and salt.
Fry for 5-8 minutes. Add cooked rice and
mix well. Remove from the heat.
Garnish with coriander leaves.
Serve with Raita.
