Bitter Melon Sambar

Ingredients:
1 cup toor dal
1/2 tsp. turmeric powder
1 -2 tbsp. oil
2-3 bitter melon, discard the seeds and cut into rounds
1 small tomatoes, chopped
1-2 tsp. tamarind juice
1 tbsp. jaggery
2 tbsp. grated, coconut
1-1/2 tbsp. Sambar Powder
1 long spring curry leaves
Salt to taste
For Seasoning:
1 tsp. oil
1/2 tsp. mustard seeds

Method:
Cook toor dal in a pressure cooker with water and turmeric. Keep aside.
Grind sambar powder, coconut with little water to a fine paste.
Heat oil in a pan, fry bitter melon till light brown.
Add tomatoes, salt, tamarind, jaggery, cooked dal, ground paste, curry leaves and little water.
Bring it to boil
for 10-12 minutes until the sambar thickens.
(If necessary add little more water)
Remove from the heat.

Heat oil in a pan, add seasonings when it starts to split, stir into the sambar.

Serve hot with rice.
