Ingredients:
1 cup grated carrot (about 2 medium)
1/2 cup boiled whole kernel sweet corn (Niblets)
1 tbsp. grated, coconut
1 tsp. lemon juice
1 tbsp. chopped, coriander
1-2 jalapeno pepper, finely chopped Or green
chillies
1 tsp. oil
1/4 tsp. mustard seeds
Salt to taste
Method:
Combine grated carrot, coconut, corn, lemon
juice and salt in a medium sized bowl.
Mix well and set aside. Heat oil in a pan, add the mustard seeds and allow the seeds
to pop.
Add chopped jalapeno pepper and fry
a few
seconds. Add this seasoning to the carrot-corn mixture.
Mix well and garnish with chopped coriander and serve |
