(Ash Gourd Halwa)

Ingredients:
3 cups peeled and grated ash gourd (Hing)
1-1/2 cups sugar
4-5 tbsp. ghee
1/2 tsp. cardamom powder
1 tbsp. semolina (rave)
2 tbsp. chopped almonds and cashew nuts
Method:
Heat little ghee in a pan, add nuts, semolina and fry till light brown. Remove from heat and set aside.
Place the grated ash gourd in a heavy based pan and bring to the boil over medium heat.
Till the moisture is evaporated. Add sugar, once sugar is added it becomes watery.
Cook on a low flame stirring in between, till the contents become thick and leave sides.
Stir in the ghee, cardamom and simmer for 5-10 minutes.
Add fried rave, nuts and mix well. (Add more ghee if required).
Serve hot or cold.
