Pongal

Payaswini's Recipes





Ingredients:
1 cup rice
1/2 cup moong dal (mung beans)
3 cups water
1 cup jaggery
1/2 cup grated, coconut
1/2 tsp. cumin seeds
3-4 tbsp. ghee
1 tbsp. cashew nuts, chopped
1 tbsp. raisins
1 tsp. ground cardamom
Pinch of salt
Method:
Wash rice and moong dal together. Drain and set aside.
In a sauce pan fry the drained rice, moong dal and cumin seeds with ghee.
Add water and bring to the boil. Add pinch of salt, jaggery, coconut, cardamom and stir.
Lower the heat and cook until the rice and moong dal are cooked.
Fry the cashews in ghee. Just before the rice is cooked add cashews and raisins.
Serve hot.
