Brinjal Eengaayi

Payaswini's Recipes





Ingredients:
6-8 chinese Brinjals
1 -2 onions, chopped

1 tbsp. grated coconut
1-2 tbsp. Bhath Powder

2 -3 tbsp. oil
1/2 tsp. mustard seeds
1/2 tsp. turmeric powder
1 long spring curry leaves
1 tbsp. lemon juice
1 tsp. chopped coriander leaves
Salt to taste
Method:
Wash and cut brinjals into long medium pieces and keep the pieces in the water.
Heat oil in a saucepan. Add mustard, allow to splutter, add curry leaves, turmeric, onions.
Fry till the onions becomes translucent. Add brinjals (discard the brinjal water)
fry the brinjals until light bown.
Add coconut, bhath powder, salt and mix well for 5-8 minutes
Remove from the heat add lemon juice, coriander leaves and mix well.
Serve hot with Chapatis/Dose/Rice.
